The Ornery Old Lady's Quick Muffin Cake

Did y'all ever have one of them days where ya want some muffins but everything's so crazy and chaotic that even the thought of pourin' the batter into them little cups in the muffin tin is overwhelming? That's purty much every day fer Ornery, 'specially when Cactus Clem done drank all her coffee that she had set on the windowsill in a big Mason jar fer cold brewing. The ole gal surprised me, though. Instead of throwin' her heavy square glass pan at Cactus Clem, she done baked up a muffin cake! 

Here's Ornery's recipe. All y'all are gonna need is a box of muffin mix, a couple of eggs or egg substitute to equal two eggs, 1/2 cup of butter or margarine, and 2/3 cup of milk or thereabouts. Ornery ain't unpacked her measuring cups yet, so she just put in enough milk to make a cakelike batter.

Preheat yer oven to 350 degrees. Melt the stick of butter or margarine in yer 8 x 8 glass pan whilst the oven is heating up. Put the muffin mix into a bowl and crack the eggs in. When the butter or margarine is melted, pour it into the muffin mix. Add enough milk to make a cakelike batter, and stir till there ain't no more dry places. Fold in blueberries or whatever add-ins came in yer mix. Pour the batter into the pan and bake fer about 40 minutes or whenever the cake is nice an' firm.

Now comes the hard part. Y'all gotta let the cake cool so's you don't burn yer mouth. Then y'all kin cut off a big slice an' enjoy it with a nice glass of milk or cold brew coffee or whatever y'all got around that Cactus Clem ain't drunk up. 

By the way, y'all gotta make sure the mix yer using is the regular size box and not one of them packages that only makes six muffins. You kin use two of the six muffin packages to make one regular size muffin mix.
