I'm rather sad that it's been two months since I did a Sunday Dinner post. But rather than lamenting and berating myself (something that I excel at) let's dive right into the deliciousness.
On my recent foray to Friendly Nick's butcher in Fort Collins (
http://fnbutcher.com) I picked up a gorgeous eye round roast. The eye round is an inexpensive, fairly lean cut of meat, so it can be tough if not cooked properly. If possible, I recommend getting meat from an independent butcher. I've found that it doesn't cost any more than purchasing the meat in a grocery store, and the quality is far superior.
I fired up the saute function on the Instant Pot, put in a little canola oil, let it heat up, and browned the outside of the roast. I then sprinkled the roast with my favorite spice mix, The Blend from Kinder's. This mix has just three ingredients: black pepper, sea salt, and garlic powder. You could certainly make your own.
I like to stock up on Kinder's from Costco when it's on sale because it's very inexpensive. You can also purchase two 10.5-ounce bottles from Amazon, currently priced at $18.94.

I poured a bit of chicken stock into the bottom of the pot, closed the lid, and fired up the slow cooker function. I've mentioned previously how much I love using my Instant Pot as a slow cooker. It cooks the food more evenly, and the outside of the pot stays cool, which makes me feel safer if I want to leave it unattended while I go out for a while.
I get the best price on chicken stock at Costco. Do NOT buy Kirkland chicken stock from Amazon or you'll pay about three times what you would in the store. If you want to buy chicken stock from Amazon, the Kitchen Basics brand is comparable to grocery store price at $3.24 for 32 ounces.

About three hours into cooking, I remembered that I wanted to find a copycat recipe for Arby's beef. My son and I love the Beef and Cheddar sandwiches, but you really don't get enough beef bang for your buck. Lo and behold, I found a recipe at Secret Copycat Restaurant Recipes. I'll give you the full recipe below and then tell you the modifications I made.
Materials
1 3 to 4-pound Roast Beef
1/2 cup Water
1/2 cup firmly packed Brown Sugar
1 envelope Onion Soup Mix
1 Onion
1/2 teaspoon Garlic Powder
Salt and freshly ground Black Pepper
8 Onion Hamburger Buns
Instructions
1. Place roast in crockpot.
2. Stir remaining ingredients (except the buns, of course) together and pour over roast.
3. Cook for 8 - 10 hours on low, stirring occasionally.
4. Pull apart or slice thin.
5. Serve on buns.
Notes
Makes about 8 sandwiches
The roast was halfway through cook time at the point when I added the brown sugar and onion soup mix. I didn't add any fresh onion. My excuse is feeling a bit knackered after having my second COVID shot Friday.
My son felt worse than I did. All his muscles were sore, he was a bit nauseous, and he was fatigued. I was slightly more fatigued than usual and I had to use my asthma inhaler for the first time in months. We're back to abnormal today.
The upshot is the roast didn't taste quite like Arby's, but it was really good. Next time I'll try it using the above instructions from the start and see what happens.
